In my Nonna’s house, the salt dish was never empty. White crystals piled soft as sand, cool between your fingers, sharp on your tongue. A pinch at the door kept trouble away. A pinch in the soup healed what the doctor couldn’t name. She’d wag her finger at me if I grabbed too quick. ‘Salt is alive,’ she’d say. ‘You treat it with respect.’
